
The “Plantation la Montagne” has been producing the best sugar canes of
the Island for the last 4 centuries: an excellent climate, abundant
spring water, volcanic earth and the tenacity of men, these are the
secrets of Depaz’s Rum.

The Depaz location includes the distillery, the Habitation and the
restaurant. It is in the north of Martinique, on the Caribbean coast,
2km from St. Pierre on the road to Morne Rouge at the foot of Mount
Pelée.


A bit of history
A prestigious sugar-habitation located on the slopes of Mount Pelée, la
Montagne is a part of the first concessions of the island when it was
colonized by the French in 19635. In 1638 Jacques Duparquet, the first
governor and lieutenant of Martinique, became owner of the land called
la Montagne, 6000 passes long.
In XVIII century, la Montagne encounters many problems, but from 1763
the fortune of the plantation are tied to the Pécoul family. After the
sugar crises in 1883 the Pécoul family converted la Montagne to rum
production, but…..
It’s 8th May 1902, the volcano awakenings and the eruption is
devastating. In only a few minutes a black cloud destroys the entire
city of St. Pierre.
All of the Depaz family disappears in this catastrophe with one
exception, Victor Depaz, back then a young student at Bordeaux. Finished
his studies, Victor Depaz, returns to St. Pierre as an orphan, regains
the Habitation Pécoul, 521 hectares of land that was destroyed and in
1917 begins the reconstruction of a new habitation, exactly the same as
the one where he grew up.

Our Business: rum
The renown quality of our rum is
definitely because of the climate and the natural conditions but also to
quality work and family secrets that have been passed on from generation
to generation.
Already famous for its fine aged rums (Vieux Plantation/VSOP/Hors d’Age),
aged for at least three years in oak barrels. The Depaz distillery has
another quality: rum doré. Aged for 18 months in oak barrels but not yet
considered a true aged rum. Depaz also produces excellent white rums at
50 and 55% vol.
At the Depaz distillery you can discover all the fazes of the
preparation of rum.
Visiting the distillery is free and you can follow the audio guide in
French and English, enjoying this wonderful location ambling though the
property that is imbedded with Martinique’s history
Upon finishing the visit, you can refresh yourself at the Case à
Louisette with fresh fruit juices and typical pastries. You can also
stop at the boutique for a taste of our rums and buy a few bottles and
souvenirs to take home with you.

Located in magnificent surroundings of sugar cane and the Caribbean Sea
as a back drop, Le Moulin à Cannes restaurant will welcome you in an
antique mill of the XVIII century. You can try different specialties
selected from local produce.
